Wines

The entire vineyard has been in organic farming since 2001. The 14 different grape varieties and 24 hectares are vinified separately, distinguishing the different plot. We harvest by hand and interfere as little as possible in the cellar to preserve the specificities of the different terroirs.

The cellar is open Monday to Friday from 9:00 am to 12:00 pm and from 2:00 pm to 6:00 pm, as well as on Saturday from 9:00 am to 12:00 pm.

Range «LES ENVOLÉES»

The wine range « Les Envolées » is produced in three colors: white, rosé and red. All of them are aged in stainless steel vats.

L'ENVOLÉE BLANC 2023

Grape variety : 50% Sauvignon B, 35% Chardonnay, 15% Viognier

Soil : clay - limestone terroir

Tasting notes : The nose is very aromatic with a delightful bouquet of orange blossom, hawthorn, apricot, and white peach. A subtle hint of buckwheat honey gradually emerges. On the palate, the attack is lively and dynamic with an airy and slightly effervescent texture that brings a refreshing sensation. Fruity notes of pear and quince accompany the experience. The finish is tangy with a touch of grapefruit.

Food pairings: aperitif, seafood, poultry and white meats, cheese (soft cheese, goat cheese, aged cheddar), vegetables, mixed salads, pasta and risotto.

L'ENVOLÉE ROSÉ 2022

Grape variety : 100% Syrah

Soil : stony clay-loam terroir

Tasting notes : A gourmet rosé typical of the South-Western region with an intense rose color and a rich nose. A bouquet of cherry, raspberry and blackcurrant will accompany your summer evenings. L’Envolée Rosé will surprise you with a dense and fruity body. The finish is slightly acidic and fresh.

Food pairings : aperitif, gazpacho, tomato salad, melon, world cuisine, barbecue, grilled fish, slow cooker dishes.

Alcohol : 12,5 % ABV

L'ENVOLÉE ROUGE 2021

Grape varieties : 50% Merlot, 20% Cabernet Sauvignon, 20% Cabernet Franc, 10% Côt

Soil : Blend of various plots

Tasting notes : L'Envolée red delivers an intense nose with notes of blackcurrant and roasted green pepper. Fresh and dynamic with a slightly high acidity and mouth-watering tannins. Casual-drinking wine !

Food pairings : cold cuts, tapas, grilled tuna and mullet, mixed salad with vinaigrette dressing, vegetable stew, duck, pasta, pizzas, chili con carne, roasted chickens.

Alcohol : 12,5% ABV

SAUVIGNON BLANC 2023

Grape variety : 100% Sauvignon blanc

Soil : clay-limestone soil terroir

Tasting notes : An Atypical Sauvignon!

This wine presents a subtle nose, revealing delicate notes of honeysuckle, hawthorn, and broom. On the palate, the attack is fresh and lively, accompanied by hints of lemon zest and grapefruit. The texture is well-structured with notes of white fruits. The finish is marked by a beautiful acidity with subtle citrus notes.

Food pairings: oysters, shrimps, crabs, grilled white fish, white meats, green vegetables, sushi, sashimi, goat cheeses, lightly spiced Mexican or Thai cuisine

CHENIN BLANC 2022

Grape variety : 100% Chenin

Soil : clay-loam terroir

Tasting notes : This dry white wine reveals aromas of acacia, pear and some subtle notes of quince. The palate is dense, fresh and full of yellow fruits and citrus fruits. The finish is rich with nice length.

Food pairings : seafood, fish, soft (goat) cheese, poultry, vegetables, spicy dishes, salads and light dishes, apple tart, lemon tart

PINOT SYRAH 2021

Grape variety : 30% Pinot noir, 70% Syrah

Soil :  clay-loam terroir

Tasting notes : The profile is airy and fresh. The nose tends between small red fruits and fine vegetal notes. The attack on the palate is fresh with strawberry notes brought by Pinot Noir. The mid-palate’s smoothness recalls the subtle flavours of blackcurrant and blackberries. Delicious, slightly minty and palatable wine. The finish is long and spicy, typical of Syrah.

Food pairings : aperitif, cold cuts, roast beef, leek pie, grilled meats, tartare, salads, ratatouille, mushroom or chestnut dishes, chocolate desserts.

PINOT NOIR 2022

Grape variety : 100% Pinot Noir

Soil: clay-loam terroir

Tasting notes : The nose of the wine is very pleasant with aromas of red fruits, oriental spices, and blackcurrant jam. Dense and fleshy on the palate with velvety tannins brought by aging in old oak barrels. This harmonious and delicate wine will enchant you with its finesse!

SYRAH 2022

Grape variety : 100% Syrah

Soil : clay-loam terroir

Tasting notes : This wine offers an intense nose on black fruits, slightly peppery notes, dried flowers, and sloe. The palate is both concentrated and silky, marked by notes of blueberries, blackcurrant with a slight hint of dried straw. A fresh, sour, and spicy finish is accompanied by the ripe tannins.

Food pairings : aperitif, cold cuts, roast beef, leek pie, grilled meats, tartare, mushroom, or chestnut dishes, salads, ratatouille.

Merlot Syrah 2022

Grape variety : 50% Merlot, 50% Syrah

Soil : clay-loam terroir

Tasting notes : The first nose opens up to a bouquet of fresh fruits, blackcurrant, and Morello cherry. The palate is generous, supported by structured tannins. Notes of licorice and spices envelop the mouth, leaving a fresh and tangy finish.

Food Pairings : grilled meats (ribeye steak, grilled lamb, or duck breast), slow-cooked dishes (stews, braised dishes, or tagines), spicy dishes (Mediterranean cuisine, dishes spiced with paprika or pepper), charcuterie, and cheeses.

The range « Terroirs» is our premium range of wines. These wines are made from the finest grapes selected from distinct plots of vines and are produced in limited quantities.

« En travers » 2023

Grape variety : 100% Aligoté

Terroir : Plot « Taberly » - Planted in 1987 - Clay-loam soil

Tasting notes : The nose, initially discreet, opens up with aromas of slightly herbaceous white flowers: acacia, sage, and honeysuckle. The attack on the palate is lively and fresh, followed by notes of pear and lemon. The texture of the wine is dense and crisp, offering a refreshing finish with a beautiful acidity.

Food Pairings: seafood, fish, fresh salads, goat cheese and vegetable dishes.

Wine Aging : on the fine lies for 7 months in stainless steel tanks

« Amplitude » 2023

Grape variety : 100% Chardonnay

Terroir : Plot « Château » - Planted in 2016 - Clay-limestone soil

Tasting notes : The intense nose has aromas of peach, mango, and ripe citrus fruits, accompanied by light vanilla notes, butter, toasted almonds and a hint of honey. The palate is full-bodied and creamy, with a moderate amount of acidity. A flavourful blend of baked apple, pear, and grapefruits with a long finish marked by a beautiful freshness and minerality.

Food Pairings: white meats, fish, soft cheeses, white meat skewers, chicken in cream sauce, mushroom or asparagus risotto, vegetable tarts.

Wine Aging :  45% aged on fine lees in oak barrels for 6 months, 55% aged in stainless steel tank

« La Pointe » 2020

Grape variety : 100% Syrah Parcel selection

Terroir : Plot « La Pointe » - Planted in 1997 - Loamy-gravelly soil

Tasting notes : Oriental spices, liquorice, black fruits, and red berries such as cherries and raspberries are presents on the nose. Some grilled notes, roasted almonds, cloves, and vanilla are brought by aging in new demi-muids. Voluminous and full of ripe fruits, the mouth has also the coated and woody tannins and a fresh length.

Wine Aging :  12 months in new demi-muids (600 liters oak cask)

« Les Vieux » 2021

Grape variety : 100% Pinot noir 

Terroir : Plot « Taberly » - Planted in 1988 - Clay-loamy soil

Tasting notes : The complex nose reveals aromas of red fruits, oriental spices, and blackcurrant jam, offering depth to the olfactory experience. On the palate, this wine stands out for its finesse et delicate acidity, with velvety tannins imparted by oak barrel aging. Notes of blueberries and cherries pleasantly persist, accompanying each sip with a lovely, fresh and long finish.

« A bout de souffle » 2019

Grape variety : 100% Marselan

Terroir : Plot « Pariac » - Planted in 2012 - Sandy loam and gravel soil

Tasting notes : 100% Marselan is a rare and original wine with rich and complex aromas of cocoa, leather, licorice, kirsch, and orange peel. The attack on the palate is very fresh and smooth. Then, the wine rises in intensity, offering a spicy, minty volume with notes of dried fruits and a lovely fine tannic frame. Perfectly balanced and structured, with good acidity and a persistent finish. This wine also has excellent aging potential.

Food Pairings: red meats, saucy dishes, spicy dishes, pasta, grilled vegetables, dark chocolate cake.

Wine Aging : 12 months in demi-muids (600 liters oak cask)

« Clement Ader » 2021

Grape variety : 40% Cabernet Sauvignon, 30% Merlot, 30% Cabernet Franc

Terroirs : Cabernet Sauvignon plot «Cabirol Nord» - Planted in 1997 - clay-loamy soil;  Merlot plot « Cabirol Sud » - Planted in 1988 ;  Cabernet Franc plot « Barada » - Planted in 2010 - clay-limestone soil 

Tasting notes : The initial nose opens with lightly smoky notes, accompanied by subtle vegetal hints and grilled bell pepper, joined on the second nose by a touch of violet, blackcurrant, and dried herbs. On the palate, it reveals itself as ample and fresh, with nuances of blueberries and cherries, wrapped in a silky tannic structure. It's a youthful wine, both juicy and tangy, promising a fine evolution in the bottle!

Food pairing: red meats, duck, poultry, pork, rack of lamb, aged cheeses, pies, mushroom and truffle dishes, chocolate desserts.

Wine Aging : 12 months in Bordeaux barrels
