The entire vineyard has been in organic farming since 2001. The 14 different grape varieties and 24 hectares are vinified separately, distinguishing the different plot. We harvest by hand and interfere as little as possible in the cellar to preserve the specificities of the different terroirs.

The cellar is open Monday to Friday from 9:00 am to 12:00 pm and from 2:00 pm to 6:00 pm, as well as on Saturday from 9:00 am to 12:00 pm.
The cellar is closed on public holidays.

Range «LES ENVOLÉES»
The wine range « Les Envolées » is produced in three colors: white, rosé and red. All of them are aged in stainless steel vats.
L'ENVOLÉE BLANC 2023
Grape variety : 50% Sauvignon B, 35% Chardonnay, 15% Viognier
Soil : clay-limestone for Sauvignon B & Chardonnay, gravelly loam for Viognier
Tasting notes : The nose is aromatic with a lovely bouquet of orange blossom, hawthorn, apricot, and white peach. A subtle hint of buckwheat honey gradually emerges. On the palate, the attack is lively and dynamic, with an airy and slightly effervescent texture that brings a refreshing sensation. Fruity notes of pear and quince stand out, while the finish is tangy with a touch of grapefruit.
Food pairings: aperitif, seafood, poultry and white meats, cheese (soft cheese, goat cheese, aged cheddar), pasta and risotto, mixed salads, vegetables.

Grape variety : 100% Syrah
Soil : stony clay-loam terroir
Tasting notes : A gourmet rosé typical of the South-Western region with an intense rose color and a rich nose. A bouquet of cherry, raspberry and blackcurrant will accompany your summer evenings. L’Envolée Rosé will surprise you with a dense and fruity body. The finish is slightly acidic and fresh.

Tasting notes : The Envolée Rouge offers an intense nose of red fruits, jammy blackcurrant, and grilled bell pepper. On the palate, the attack is smooth, with good structure and a subtle spicy touch. The finish is fresh, tangy, with soft and easy-drinking tannins. A wine to enjoy with friends!

SAUVIGNON BLANC 2023
Grape variety : 100% Sauvignon blanc

Tasting notes : An Atypical Sauvignon!
This wine presents a subtle nose, revealing delicate notes of honeysuckle, hawthorn, and broom. On the palate, the attack is fresh and lively, accompanied by hints of lemon zest and grapefruit. The texture is well-structured with notes of white fruits. The finish is marked by a beautiful acidity with subtle citrus notes.

Tasting notes : This dry white wine reveals aromas of acacia, pear and some subtle notes of quince. The palate is dense, fresh and full of yellow fruits and citrus fruits. The finish is rich with nice length.

PETILLANT NATUREL "LA BULLE" 2023 (NATURAL SPARKLING WINE)
Grape Variety : 85% Chenin Blanc, 15% Viognier
Soil : Gravelly, loamy clay
Tasting Notes : A naturally sparkling wine. The nose opens with an aromatic explosion, offering an enchanting bouquet of orange blossoms, ripe apricot, and hawthorn, complemented by subtle hints of acacia honey. On the palate, the attack is refreshing and crisp, providing immediate freshness. The mid-palate reveals fruity complexity, marked by juicy notes of pear and quince, with a light touch of white peach. The finish is both long and tangy, with grapefruit notes.
Aging : Viognier with ~ 7 g/l of sugar, blended with fermented Chenin. Second fermentation in bottle. 8 months on lees.
Food Pairings : Seafood and shellfish, sushi and sashimi, composed salads, fresh goat cheeses, foie gras, fruit tarts.

PINOT SYRAH 2022
Grape variety : 10% Pinot noir, 90% Syrah
Soil : clay-loam terroir
Tasting notes : An expressive and fruity wine! The nose is open, revealing notes of black fruits such as blackberry and blackcurrant, complemented by hints of raspberry and a fine fresh herbal note. The palate is full and smooth, evolving towards nuances of blueberry and cherry jam. Delicious and fruity, this wine shows great concentration thanks to the sunny 2022 vintage. The finish, accompanied by a lovely freshness, is persistent.
Food pairings : aperitif, cold cuts, roast beef, leek pie, grilled meats, tartare, salads, ratatouille, mushroom or chestnut dishes, chocolate desserts.

Tasting notes : The nose of the wine is very pleasant with aromas of red fruits, oriental spices, and blackcurrant jam. Silky on the palate at first, it gains in power thanks to its firm tannins and good acidity. This concentrated wine is a true expression of Pinot from Southwest!
Food pairings : appetizers, duck breast, carpaccio, fatty fish (salmon, tuna), mushroom risottos, stuffed tomatoes, poultry, and white meats.

Tasting notes : This wine offers an intense nose on black fruits, slightly peppery notes, dried flowers, and sloe. The palate is both concentrated and silky, marked by notes of blueberries, blackcurrant with a slight hint of dried straw. A fresh, sour, and spicy finish is accompanied by the ripe tannins.

Soil : clays, silts, stones, boulbènes (fine siliceous soils).
Tasting notes : The first nose opens up to a bouquet of fresh fruits, blackcurrant, and Morello cherry. The palate is generous, supported by structured tannins. Notes of licorice and spices envelop the mouth, leaving a fresh and tangy finish.
Food Pairings : grilled meats (ribeye steak, grilled lamb, or duck breast), slow-cooked dishes (stews, braised dishes, or tagines), spicy dishes (Mediterranean cuisine, dishes spiced with paprika or pepper), charcuterie, and cheeses.

Grape variety : 100% Aligoté
Terroir : Plot « Taberly » - Planted in 1987 - Clay-loam soil
Tasting notes : The nose, initially discreet, opens up with aromas of slightly herbaceous white flowers: acacia, sage, and honeysuckle. The attack on the palate is lively and fresh, followed by notes of pear and lemon. The texture of the wine is dense and crisp, offering a refreshing finish with a beautiful acidity.
Aging : on the fine lies for 7 months in stainless steel tanks.

Terroir : Plot « Château » - Planted in 2016 - Clay-limestone soil
Tasting notes : The intense nose has aromas of peach, mango, and ripe citrus fruits, accompanied by light vanilla notes, butter, toasted almonds and a hint of honey. The palate is full-bodied and creamy, with a moderate amount of acidity. A flavourful blend of baked apple, pear, and grapefruits with a long finish marked by a beautiful freshness and minerality.
Aging : 45% aged on fine lees in oak barrels for 6 months, 55% aged in stainless steel tank.
Food Pairings: white meats, fish, soft cheeses, white meat skewers, chicken in cream sauce, mushroom or asparagus risotto, vegetable tarts.

Terroir : Plot « La Pointe » - Planted in 1997 - Loamy-gravelly soil
Tasting notes : The nose is intense and complex, opening with notes of oriental spices, licorice, and black and red fruits: blackberry, blueberry, blackcurrant, cherry, and raspberry, followed by hints of roasted almonds and a subtle touch of vanilla brought by aging in new demi-muids. The slightly tight and woody tannins accompany a full-bodied palate rich in ripe fruits.
Aging : 12 months in new demi-muids (600 liters oak cask)

« A BOUT DE SOUFFLE » 2019
Grape variety : 100% Marselan
Terroir : Plot « Pariac » - Planted in 2012 - Gravelly clay loam soil
Tasting notes : 100% Marselan is a rare and original wine with rich and complex aromas of cocoa, leather, licorice, kirsch, and orange peel. The attack on the palate is very fresh and smooth. Then, the wine rises in intensity, offering a spicy, minty volume with notes of dried fruits and a lovely fine tannic frame. Perfectly balanced and structured, with good acidity and a persistent finish. This wine also has excellent aging potential.
Aging : 12 months in demi-muids (600 liters oak cask)
Food Pairings: grilled meats (chicken, lamb, pork), charcuterie, sauced dishes (stew, pasta), roasted vegetables (peppers, eggplants).

Tasting notes : The initial nose opens with lightly smoky notes, accompanied by subtle vegetal hints and grilled bell pepper, joined on the second nose by a touch of violet, blackcurrant, and dried herbs. On the palate, it reveals itself as ample and fresh, with nuances of blueberries and cherries, wrapped in a silky tannic structure. It's a youthful wine, both juicy and tangy, promising a fine evolution in the bottle!
Aging : 12 months in Bordeaux barrels
