Wines

The entire vineyard has been in organic farming since 2001. The 14 different grape varieties and 24 hectares are vinified separetly, distinguishing the diffrent plots. We harvest by hand and interfere as little as possible in the cellar, in order to preserve the specificities of the different terroirs.

Range «LES ENVOLÉES»

The wine range « Les Envolées » is produced in three colors: white, rosé and red. All of them are aged in stainless steel vats.

L'ENVOLÉE BLANC 2021

 

Grape variety : 100% Sauvignon Blanc

Terroir :  clay - limestone

Tasting : The nose is rather reserved with slight chalky notes. On the palate, the wine is almost mineral, crispy with a little beading aspect. The finish is dry and mineral with a hint of citrus.

Food & Wine pairings: seafood, Scallop carpaccio, mussels and fries, fish, sushi, mixed salads.

L'ENVOLÉE ROSÉ 2022

 

Grape variety : 100% Syrah

Terroir : stony clay-loam

Tasting : A gourmet rosé typical of the South-Western region with an intense rose colour and a rich nose. A bouquet of cherry, raspberry and blackcurrant will accompany your summer evenings. L’Envolée Rosé will surprise you with a dense and fruity body. The finish is slightly acid and fresh.

Food & Wine pairings : aperitif, gazpacho, tomato salad, melon, world cuisine, barbecue, grilled fish, slow cooker dishes.

Service temperature:  between 8° and 10°

L'ENVOLÉE ROUGE 2020

 

Grape variety : Merlot, Cabernet Franc, Cabernet Sauvignon, Côt

Terroir : Blend of various plots

Tasting : L'Envolée red delivers an intense nose with notes of blackcurrant and roasted green pepper. Fresh and dynamic with a slightly high acidity and mouth-watering tannins. Casual-drinking wine !

Food & Wine pairings : cold cuts, tapas, mixed salad with vinaigrette dressing, grilled tuna and mullet, vegetable stew, duck, pasta, pizzas, roasted chickens, chili con carne.

Service temperature:  between 16° and 17°

RANGE « HOMMAGE» WHITE

The range « Hommage » is the most symbolic range of our wine estate. Most wines of this range are aged in stainless steel vats.

SAUVIGNON BLANC 2022

Grape variety : 100% Sauvignon blanc

Terroir : clay - limestone

Tasting : Dry white wine, very aromatic: white flowers, dry herbs, broom and lemongrass. The creamy and fruity attack (citrus, peach) followed by a beautiful vivacity. The depth and concentration in the mid-palate reflect the 2022 solar vintage. The finish is complex and refreshing.

Food & Wine pairings: fish, shellfish, grilled vegetables, poultry, white meats, goat cheese, crème brûlée.

CHENIN BLANC 2022

Grape variety : 100% Chenin

Terroir : clay-loam

Tasting : This dry white wine reveals aromas of acacia, pear and some subtle notes of quince. The palate is dense, fresh and full of yellow fruits and citrus fruits. The finish is rich with nice length.

Food & Wine pairings : aperitif, shrimps, fish, shellfish, grilled vegetables, roasted poultry or with cream, paella, goat cheeses.

Service temperature :  between 10° et 13°

The range « Hommage » is the most symbolic range of our wine estate. Most wines of this range are aged in stainless steel vats.

SYRAH 2022

Grape variety : 100% Syrah

Terroir : clay-loam

Tasting : This wine offers an intense nose on black fruits, lightly peppery notes, dried flowers, sloe. The palate is concentrated but silky marked by notes of blueberries, blackcurrant with a subtle nuance of dried straw. The fine tannins accompany a fresh, sour and spicy finish.

Food & Wine pairings : aperitif, cold cuts, roast beef, leek pie, grilled meats, tartare, mushroom or chestnut dishes, salads, ratatouille.

Service temperature :  between 12° and 18°

PINOT SYRAH 2021

Grape variety : 30% Pinot noir, 70% Syrah

Terroir :  clay-loam soil

Tasting :  The profile is airy and fresh. The nose tends between small red fruits and fine vegetal note. The attack on the palate is fresh with notes of strawberries brought by Pinot Noi. The mid-palate is supple and goes back to the nuances of blackcurrant and blackberries. Delicious, slightly minty and greedy. The finish is long and spicy, typical of Syrah.

Food & Wine pairings : aperitif, cold cuts, roast beef, leek pie, grilled meats, tartare, salads, ratatouille, mushroom or chestnut dishes, chocolate desserts.

PINOT NOIR 2021

Grape variety : 100% Syrah

Terroir : clay-loam soil

Tasting : The nose of the wine is complex with aromas of red fruits, oriental spices and blackcurrant jam. Dense and fleshy on the palate with velvety tannins brought by aging in oak barrels. This harmonious, delicate wine will seduce you with its finesse!

Food & Wine pairings : aperitif, cold cuts, roast beef, leek pie, grilled meats, tartare, mushroom or chestnut dishes, salads, ratatouille.

Merlot Syrah 2022

Grape variety : 60% Merlot, 40% Syrah

Terroir : clay-loam soil

Tasting : The nose opens on an intense bouquet with notes of fresh fruit, blackcurrant and sour cherry. The attack on the palate is ample with coated tannins. The smoothness and the spices of the Syrah line the palate leaving a tangy finish.

Food & Wine pairings : barbecue, lamb, grilled meats, sausage rougail

Service temperature :  between 12° and 18°

The range « Terroirs» is our premium range of wine. The are made from the best grapes chosen from a select parcel of vines and produced only in limited quantities.

« En travers » 2022

Grape variety : 100% Aligoté

Terroir : Plot « Taberly » - Planted in 1987 - Clay-loam soil

Tasting : The discreet nose at the beginning opens with notes of white flowers, acacia, linden and citrus. The full and silky mouth finishes with a nice tangy freshness. The material of the wine is rich, unctuous and supple with a fine bitterness perfectly balanced.

« Amplitude » 2022

Grape variety : 100% Chardonnay

Terroir : Plot « Château » - Planted in 2016 - Clay - limestone soil

Tasting : The intense nose with aromas of yellow fruits, citrus fruits, toasted almonds, exotic fruits and honey. The palate is rich, vibrant, brioche and creamy and is accompanied by notes of spices: white pepper, grapefruit, dried fruits. The finish is marked by a beautiful freshness and minerality.

« La Pointe » 2020

Grape variety : 100% Syrah

Terroir : Plot « La Pointe » - Planted in 1997 - Loamy-gravelly soil

Tasting : On the nose, notes of oriental spices, blueberries and cherries blend with a woody note, toasted almonds and a little vanilla touch brought by aging in oak barrels. The coated and woody tannins accompany a rich mouth of ripe fruits.

« Les Vieux » 2021

Grape variety : 100% Pinot noir

Terroir : Plot « Taberly » - Planted in 1988 - Clay-loamy soil

Tasting : Complex nose with aromas of red fruits, oriental spices and blackcurrant jam. Dense and fleshy on the palate with velvety tannins brought by the aging in barrels. The notes of blueberries and cherries will accompany the pleasure along the length.

« A bout de souffle » 2019

Grape variety : 100% Marselan

Terroir : Plot « Pariac » - Planted in 2012 - Sandy loam and gravel soil

Tasting : This wine has very intense and complex aromas: cocoa, leather, kirsch, ripe and jammy fruits, licorice and menthol. Opulent and spicy on the palate with a nice tannic structure and a vibrant acidity. A great ability to keep.

« Clement Ader » 2020

Grape variety : 70% Merlot, 30% Cabertnet franc

Terroir : Plots «Cabirol» - Planted in 1987 - Clay-loamy soil

Plot «Château» - Planted in 2016 - Clay-loamy soil

Tasting : The nose opens with slightly smoky notes, accompanied by a hint of violet, vanilla, licorice, cut herbs and tobacco. The palate is ample and voluptuous, with notes of blueberry and cherry, enveloped by a silky tannic frame.
